Another favorite recipe – Roasted Brussels Sprouts and Sweet Potatoes

This is a favorite recipe for the whole family. The first time I had this vegetable dish was the second time I ate Brussels Sprouts. Roasted they are sooo good. My health conscious niece served this dish for Christmas dinner and I was converted into a Brussels Sprouts fan. The best part are the little leaves that fall off and roast to a crisp. They taste like nuts!  I love to drizzle this dish with Traders Joes Balsamic vinegar glaze.  Delish!   Not drizzling though … in a 8 week weight loss competition at the gym.

 

Rinse Brussels Sprouts and take off outer leaves

Add cut up vegetables like sweet potatoes and onions. Toss with Extra Virgin Olive Oil  – EVOO – and extra seasonings. 

Toss on baking pan making space around for even cooking.
